STRAWBERRY WINE DESSERT SAUCE

Invite your favorite people over for dinner and don’t stress about dessert–with just five ingredients and practically no prep, this recipe is too easy to make.  All you need is a bottle of wine, an orange, a carton of strawberries, a tub of ice cream, and a few scoops of sugar. Best part? There might just be enough wine left in the bottle to get you through your dinner prep. 


Serves: 8   |   Prep Time: 10 min   |   Cook Time: 50 min

INGREDIENTS

  • 2 cups wine*

  • ½ cup + 2 Tablespoons sugar

  • Zest from 1 orange

  • Juice from 1 orange

  • 12 oz. strawberries

INSTRUCTIONS

  1. In a medium saucepan combine wine, sugar, zest, and juice.

  2. Bring to simmer and cook uncovered until reduced by half and liquid has thickened slightly, about 50 minutes. Stir a few times in the first 5 minutes to make sure sugar has dissolved.

  3. While wine is reducing, hull strawberries and cut them in half.

  4. After wine sauce has reduced, remove from heat and let cool for 5 minutes. Mix in strawberries and place in refrigerator to cool completely.

  5. Serve cold with vanilla ice cream, whipped cream, or sweetened mascarpone. Or consider amping up the traditional strawberry shortcake!

*Red wines such as Barbera, Mourvedre, or Merlot lend to a deep dark cherry richness. If you’re looking for a lighter finish for a summertime meal, use a crisp white wine like Sauvignon Blanc instead.
